SUPER FAST MEAL


You don't have enough time to cook,well here are 2 quick go-to recipes and only in 10 minutes your meal is ready..Enjoy it...
FAST LENTIL CURRY
Ingredients


  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1 clove garlic, crushed
  • 300 g pumpkin, cut into 3 cm chunks
  • 4-6 baby potatoes, quartered
  • 400 g can chopped tomatoes, undrained
  • 400 g can brown lentils, drained
  • 2 tablespoons chopped fresh coriander leaves
Preparation
Heat oil in a large frying pan. Add cumin, turmeric and garlic and cook for 1 minute. Stir in pumpkin, potatoes and diced tomatoes. Cover and simmer for 10 minutes. Add lentils and cook for 5 minutes or until pumpkin and potato pieces are cooked. Add coriander leaves and serve.
CHICKEN FRIED RICE
Ingredients


oil spray
4 spring onions, sliced
500 g frozen peas, corn and carrots
4 cups cooked rice (or use microwaveable rice)
2 cups shredded cooked chicken, skin removed (use leftovers or buy a pre-cooked chicken)
2 tablespoons salt-reduced soy sauce
Preparation
Heat a large, non-stick frying pan over a medium heat. Spray with oil then fry spring onions for 1-2 minutes. Add frozen vegetables and fry for a couple more minutes until cooked through.
Add rice, chicken and soy sauce to pan and stir to combine. Heat for a few minutes more then serve immediately.
